Snow Fungus Soup with Lingzhi & Honey

A Southern Chinese-style dessert soup to keep warm with and is especially suitable for eating in the cool, dry autumn. or cold winter.


In Traditional Chinese Medicine, this soup keeps the lungs moist and arresting dry cough especially in autumn. Long-term consumption can improve cough, insomnia and dream disturbance by improving lung and kidney meridian yin deficiencies.

  • 1 piece of EV LingZhi (~15 g)

  • 15 g of snow fungus (Tremella fuciformis) (银耳 yín ěr; 雪耳 xuě ěr; or 白木耳 bái mù ěr)

  • 10 g of goji berries

  • 5 g of red dates

  • 30 g of lotus seeds

  • honey to taste

Break up and soak snow fungus until hydrated.

2.

​Put the EV LingZhi, hydrated snow fungus, goji berries, red dates, and lotus seeds into a pot. Submerge with water and bring to a boil.

3.

Put on low heat once boiling and simmer for an hour until soup becomes thick.

4.

Serve hot, add honey or other sweetener to taste and enjoy!

Storage:

Soup can be stored in fridge for 3 days.
